Aunt Virgie Lee's Swedish Kringle

My Aunt Virgie Lee made this dessert for me on a visit. With desserts like this one, she always keeps me coming back!

Crust:

1-1/4 c flour
1/2 c butter
4 T cold water

Preheat oven to 400°F.

Cut butter into the flour. Add the water. Form into a dough, and press into the bottom of a jelly roll pan.

Filling:

1 c water
1/2 c butter
1 c flour
3 eggs
1 t vanilla

In a saucepan, boil the water and the butter. Remove from eat and add the flour all at once, stirring until combined. Add each egg, one at a time, beating until the egg is incorporated. Stir in vanilla.

Spread the filling over the crust. Bake for 20 minutes. Reduce the heat to 375°F, and bake for another 25 minutes.

Frosting:

2 c powdered sugar
pinch of salt
2 T softened butter
1 t vanilla
2 T evaporated milk

Beat together the sugar, salt, and butter. Stir in the vanilla. Beat in the milk. Frost the kringle while it is still slightly warm. Cut the kringle into bars.

Note: For a chocolate frosting, add 2 T cocoa to the powdered sugar and salt before beating in the butter.

Uncooked Fudge

4-1/2 c sugar
1 can evaporated milk

Boil five minutes. Remove from heat and add:

3 large (5 oz) Hershey bars
2 packages chocolate chips
1 pint marshmallow creme

Add quickly to sugar mixture, stir, pour out into pan.

Fudge Squares

3/4 c sifted cake flour
1/2 t baking powder
1/8 t salt
1/3 c shortening
2 oz (squares) chocolate
1 c sugar
2 eggs, well beaten
1/2 c chopped walnuts
1 t vanilla

Sift flour, baking powder, and salt. Melt shortening with chocolate. Beat sugar into eggs, add chocolate mixture and blend. Add sifted ingredients, nuts, and vanilla, and mix well. Bake in a greased 8"x8" pan in a moderate oven (350°F) about 35 minutes

Cool and cut into squares. Makes about two dozen

Meringue

3 or 4 large egg whites, beaten stiff (including a pinch of salt)

Fold in:
1 c sifted sugar
10 small soda crackers crushed very fine
1 t baking powder
1/2 c chopped nut meats
1 t vanilla

Bake for 30 minutes in ungreased pie pan at 335°.

Date Loaf

Crush: 1/2 lb graham crackers
Remove pits & cut into pieces: 1 lb dates (2 c)
Cut into pieces: 1/2 lb marshmallows
Chop fine 1 c nut meats (1/4 lb)
Whip: 1 c heavy cream
Fold in: 1 t vanilla

Combine 1/2 cracker crumbs with dates, marshmallows, nuts, & whipped cream. Shape into a roll. Roll in remaining cracker crumbs. Chill roll for 12 hours. Serve it cut in slices with cream or whipped cream.

Gingerbread House


Cookie:

2-3/4 c sifted flour
3 t baking powder
1/2 t salt
1 t ginger
1 t cinnamon
1/8 t cloves
3/4 c molasses
1/3 c brown sugar
1 egg
1/2 c shortening (oil)

Stir in dry ingredients gradually. Chill 1 hour. Roll dough out on wax paper to fit 10 x 15-1/2" cookie sheet. Bake at 375° for 12 minutes. Cut warm. (See diagram.)

Fudge Marshmallow Squares

2 cups sugar
1 cup nut meats
5 tablespoons cocoa
1 teaspoon vanilla
1/8 teaspoon salt
2 tablespoons butter
1 cup milk
16 marshmallows
2 tablespoons syrup
2 cups graham cracker crumbs

Mix dry ingredients and add milk and syrup. Cook until soft ball stage. Remove from heat, add vanilla, butter and marshmallows. Beat until marshmallows are melted. Add nuts and crumbs.

Apple Bars

These are great for potlucks or tea. If you double the recipe, bake it in a 13 X 9 pan, and add 5 minutes to the final baking time.

Crust:
1/2 cup butter
1 cup flour
1/4 cup brown sugar
1/2 cup chopped walnuts

Apple filling:
1 cup brown sugar
2 eggs, beaten
2 Tablespoons flour
1/2 teaspoon baking powder
1 lime, zested and juiced
1 large apple, peeled, cored, and grated (Granny Smith or Rome)
1/2 teaspoon cinnamon

Preheat the oven to 350. Soften the butter and mix well with the sugar and flour. Thoroughly mix in the nuts. Pat out in an 8 X 8 cake pan. Bake for 15 minutes. Remove pan from oven.

Mix together the sugar, flour, and baking powder. Add the lime juice and the eggs, and mix well. Spread the grated aoples on the crust. Sprinkle the apples with the cinnamon. Sprinkle the lime zest on the apples. Pour the filling batter over the apple mixture.

Return the pan to the oven and continue baking for another 25 minutes. Cool completely and cut into bars.
